For the making of this edition, we chose to experiment with La Lupulosa beer, from our Tijuanan friends at Cervecería Insurgente. La Lupulosa was one of the first IPA's crafted in Mexico, and is brewed with large amounts of American hops that give it an intensely fruity and citrusy character. When we thought about what a chocolate bar with La Lupulosa would be like, we imagined an experience of bright flavors making a parallel journey with chocolatey notes, so we decided to work with our cacao from Comalcalco, Tabasco and roast it under a moderate profile to bring out these attributes and obtain a pleasantly tangy, and very fragrant bar.
